Chicken Cutlets

Amount Measure Ingredient -- Preparation Method
5 chicken breast, no skin, no bone, R-T-C -- (4-6)
2 eggs
1 cup milk
1 cup bread crumbs, seasoned -- (Italian)
1/4 cup olive oil
2 tablespoons margarine
1 tablespoon garlic salt
2 tablespoons parsley
Mix eggs and milk. Dip chicken into egg mixture and then into bread
crumbs. Brown in skillet in olive
oil. Remove from skillet and put into covered casserole dish. Season
with garlic salt and put 2
tablespoons of margarine on top. Bake for 45 minutes.
Chicken Noodle Casserole

Amount Measure Ingredient -- Preparation Method
1 large bag noodles -- cooked and drained
3 cups chicken -- cooked and diced
1 can cream of chicken soup
1 can cream of mushroom soup
1 can cream of celery soup
1 can milk
grated cheese
1 can onion rings
pimiento -- (if you like for color)
Preheat oven to 350 degrees. Mix together all ingredients except onion
rings and place into a buttered
casserole dish. Put onion rings on top. Bake for about 1/2 hour or until bubbly.
Chicken Noodle Soup

5 packages Ramen Oriental Noodles
1 package thin egg noodles
1 bottle chicken flavor
1 tablespoon season salt
7 chicken breast -- (6-8)
6 14 1/2 ounce cans chicken broth
1 stick butter
Fill a soup pot 1/2 full with water and boil chicken breasts. Skim off
fat. De-bone chicken and set aside.
To the water add 6 cans broth, 1 stick butter (make sure you use
butter), 1/2 bottle chicken flavor (2
1/4 oz.). Next add chicken flavor packets from ramen noodles, season
salt (1 tsp) noodles and chicken.
You can also add 1 pkg. of thin egg noodles (this will make the soup
real noodley). Cook for about 1
hour.
Chicken Parmesan

1 cup milk
1/2 cup seasoned bread crumbs
2 cups spaghetti sauce
1 cup mozzarella cheese -- shredded
2 teaspoons parmesan cheese -- grated
2 tablespoons parsley
Flatten chicken breasts to even thickness. Mix eggs and milk. Dip chicken
into egg mixture and then into
bread crumbs. Brown in skillet with margarine over medium heat. Add spaghetti
sauce. Simmer for 15
minutes. Sprinkle with cheeses and parsley. Cover and simmer for an
additional 5 minutes or until done.
Chicken Pot Pie

Amount Measure Ingredient -- Preparation Method
4 chicken breast (boneless) -- (4 to 6)
2 packages cream cheese -- (8 ounce)
1 tbsp butter
1 can crescent roll dough (tear into squares)
1 box frozen peas (microwave as directed)
2 jars chicken gravy mix
Boil chicken and chop into bite sized pieces. In a saucepan over medium
heat combine cream cheese
and butter. Cook until melted, stirring often. Mix cream cheese mixture
and chicken together. Tear
crescent rolls into squares. Put some of the chicken,cream cheese mixture
onto dough and fold to make
triangle shape. Press and seal edges together. Bake according to package
directions (or until golden
brown.) In a bowl, microwave peas according to package direction. Heat
gravy over medium heat until
hot. Add peas to gravy. Pour gravy,peas over top of baked pies and serve.
Chicken Soup

Amount Measure Ingredient -- Preparation Method
1 box chicken noodle soup -- Lipton's
1 bag ravioli, chicken or beef -- 1/2" cubes
1 can chicken noodle soup
1 tablespoon chicken base -- or 3 bouillion cubes dissolved in cup of
hot water
1 package frozen chicken strips -- or frozen diced chicken
In large saucepan put 8 cups of water and both packages of chicken
soup. Bring to a boil. In another
pan, cook ravioli until done, then add chicken base or bouillion
dissolved in cup of water to chicken
soup. After that put your can of chicken noodle soup, frozen strips of
chicken and last your cooked
raviola. Simmer on low ready to eat. If it gets too dry you can always
add more water, but just add
some more bouillion cubes or chicken base so it doesn't taste watery.
Chocolate Fantasy Bars

Amount Measure Ingredient -- Preparation Method
1 box chocolate cake mix
1/3 cup vegetable oil
1 egg
1 cup chopped nuts
1 14 oz. can sweetened condensed milk
1 6 oz. bag chocolate chip -- semi-sweet
1 teaspoon vanilla extract
dash salt
Preheat oven to 350 degrees.
Mix cake mix (devils food makes more chocolately recipe), oil and egg until
crumbly.
Add nuts. Reserve 1 1/2 cups and press remainder firmly into 9 X 13 cake
pan.
In saucepan combine remaining ingredients, heat over low temperature til
chips are completely melted.
Pour over first layer. Top with reserve mix. Bake for 25 - 30 minutes or
until bubbly.
Cool. Cut into bars. Store loosely covered at room temperature.
Chocolate Pie

Amount Measure Ingredient -- Preparation Method
1 9 inch pie crust
2/3 cup sugar
2 tablespoons flour
1/4 teaspoon salt
3 tablespoons cocoa
2 cups milk
2 egg yolks
2 teaspoons margarine
2 teaspoons vanilla
egg whites -- use for meringue
Combine sugar, flour, salt and cocoa. Mix well. Add milk and egg yolks. Cook
over medium heat
stirring all the time until thick. Add oleo and vanilla. Pour into prepared
pie crust.
Use egg whites for meringue.
Chocolate Sour Cream Cake

Amount Measure Ingredient -- Preparation Method
2 cups sugar
1/2 cup shortening
2 cups flour
2 egg
1/2 cup sour cream
1/2 teaspoon salt
2 squares baking chocolate -- (or 6 tbspns. cocoa)
1 teaspoon vanilla extract
1 teaspoon baking soda
1 cup boiling water
Preheat oven to 350 degrees.
In a mixing bowl cream together sugar, shortening and eggs. Add sour cream,
flour, salt, bakers
chocolate, vanilla, and the baking soda (disolved in boiling water).
Pour into greased 9 X 13 cake pan or 2 round layer pans or make 24 cupcakes.
Bake for 30 minutes to make cakes or 15 - 20 minutes for cupcakes.
Chop Suey

Amount Measure Ingredient -- Preparation Method
2 pounds beef or pork -- cubed
1 medium onion -- chopped
3 tablespoons corn starch
3 tablespoons bead molasses -- (or dark syrup)
3 tablespoons soy sauce
1 envelope vegetable beef soup -- (or plain veg. soup)
2 cans chop suey vegetables
1 stalk celery -- chopped
1 cup water
1 can mushrooms
2 cubes beef bouillion or soup base -- (2 or 3 cubes)
Brown meat. Add salt and pepper. Add celery and onions. Simmer for 1 hour.
Mix cornstarch,
molasses, soy sauce, and soup with 1 cup water and add to meat. Add chop
suey vegetables (including
the liquid). Stir gently. Add mushrooms. Cook for 10 minutes. Serve over
rice and sprinkle chinese
noodles over the top.
