Funeral Potatoes

Amount Measure Ingredient -- Preparation Method
4 ounces margarine -- softened
1 10 3/4 ounce can Cream of chicken soup
1 8 ounce container sour cream
1 8 ounce package cheddar cheese -- grated
1 2 pound package frozen hash browns
1 cup cracker crumbs
Preheat oven to 350 degrees. Mix together margarine, soup, and sour
cream. Add potatoes and
cheese. Mix well. Pour into a greased 8X11- inch pan. Sprinkle with
cracker crumbs. Bake for 1 hour
and 15 minutes, uncovered.

German Chocolate Bars

Amount Measure Ingredient -- Preparation Method
1 cup chocolate wafer cookie -- crumbled
1/4 cup butter -- melted
2 4 ounce packages bakers german chocolate
1/3 cup milk
1 3 ounce package cream cheese
1 12 ounce container Cool Whip Lite(r) -- (or regular)
Grate 1/2 package of chocolate. Heat chocolate and milk over low temperature,
stir until chocolate
melts, beat in cream cheese until smooth. Cool for 5 minutes. Fold in 3 1/2
cups whip cream and grated
chocolate. Mix crumbs and butter and spread into 9 X 13 dish. Spread
chocolate/whip cream mixture
over top of crumbs. Spread remaining whip cream over top and garnish with
chocolate shavings if
desired. Freeze until firm. Remove from freezer 5 - 10 minutes before serving.
Cut into bars.
Great Low-Fat Lemon Cake

Amount Measure Ingredient -- Preparation Method
1 box lemon cake mix
1 ctn non-fat lemon yogurt
1 ctn egg substitute -- (thawed) equal to 2 eggs
1 package lemon jello
1 8 ounce carton whipped topping
Preheat oven to 350 degrees. Spray a 9X13 pan with cooking/baking
nonstick spray. In a large bowl,
empty cake mix. Add 1 1/4
cups water, lemon yogurt and thawed egg substitute. Beat until smooth.
Pour into prepared pan and
bake until top springs back when touched or until toothpick inserted in
center comes out clean. Set
aside to cool. Prepare jellow mix using 1 1/4 to 1 1/2 cups water. Let
cool, but do not allow to begin to
set. With straight up and down motion, put tines of fork through cake at
regular intervals. Gently pour
Jello over surface of cake. Jello will soak into cake. Refrigerate.
Before serving, spread top of cake
with whipped topping.
Hamburger Cheese Bake

Amount Measure Ingredient -- Preparation Method
1 1/2 pounds hamburger
1 medium onion -- chopped
1 small can mushrooms
1 8 ounce package cream cheese
1 can cream of mushroom soup
1/4 cup catsup
1/4 cup milk
1 can biscuit dough
Preheat oven to 375 degrees.
Brown hamburger and onion, then drain. In bowl, cream Philly cream cheese
and milk. Then add
catsup, mushroom soup, and mushrooms. After mixed well, blend together in
small casserole dish with
hamburger. Cover and bake for 15-20 minutes. Remove from oven and put
biscuits on top of meat and
bake for 15 more minutes or until biscuits are brown.
