Hash Brown and Ham Casserole

Amount Measure Ingredient -- Preparation Method
1 16 ounce container Sour Cream
1 32 ounce package frozen hashbrowns
1 can cream of chicken soup
2 cups ham -- cubed
1 8 ounce package American cheese -- cubed
1/4 cup onion -- chopped
2 cups corn flakes -- crushed
1/2 cup butter
1 cup Mozzarella cheese -- shredded
Preheat oven to 350 degrees. In a large bowl combine sour cream and soup.
Stir in hash browns,
american cheese, and onion. Turn into a 9X13X2 inch pan and spread evenly.
Combine corn flakes and
butter. Sprinkle over potato mixture. Bake for 30 minutes. Sprinkle with
Mozzarella cheese. Return to
oven and continue to bake for another 20-25 minutes or until bubbly around
the edges.
Hash Browns

Amount Measure Ingredient -- Preparation Method
1 can cream of chicken soup
1/2 cup milk
1 small carton sour cream
2 cups cheese -- (cheddar, long-horn, swiss or mixture of each)
1 tablespoon season salt
1/2 cup butter
1 package shredded potatoes -- (frozen or unfrozen depending on what your store has.)
Preheat oven to 340 degrees. Mix all ingredients except potatoes in blender. Fold in
potatoes. Bake in
casserole dish for 35-45 minutes.
Italian Baked Chicken Breasts

Amount Measure Ingredient -- Preparation Method
4 chicken breast (boneless) -- (4 to 6)
1 bottle italian salad dressi
1 pkg. italian seasoning
2 tbsps butter
1 can dried bread crumb (plain or italian)
Preheat oven to 350 degrees. Place chicken into a dish and pour bottle
of italian dressing over. Cover
and refrigerate for 1-2 hours. Melt butter and combine with dried
italian seasoning mix. Dip chicken into
butter/seasoning mixture and then into bread crumbs. Place into baking
dish. Bake for 45 minutes to
1 hour or until chicken is cooked completely.
Italian Beef

Amount Measure Ingredient -- Preparation Method
3 1/2 pounds beef roast
1 tablespoon garlic
1 tablespoon oregano
5 tablespoons lemon juice
1 tablespoon Worcestershire sauce
2 tablespoons Italian herb seasoning
1 tablespoon lawry season salt
1 tablespoon salt
5 bay leaf
1 cup water
Preheat oven to 350. Combine all ingredients and place in a roaster or a
dutch oven. Bake for 1 hour
per pound. Remove from oven and shred meat. Return meat to liquid and heat thru. Serve on Buns
Jelly Roll

Amount Measure Ingredient -- Preparation Method
3 packages jelly rolls -- crumbled
6 sliced bananas
1 container Cool Whip
Crumble 5 of the jelly rolls into a 9X13 pan. Slice 3 bananas over
crumbled jelly rolls. Cover with Cool
Whip. Crumble 4 jelly rolls over this and slice 3 bananas on top. Press
firmly down and add remaining
Cool Whip. Refrigerate 1 hour. Serve.

Amount Measure Ingredient -- Preparation Method
2 lbs. s ground beef
1 medium onion (chopped)
1 can tomato soup -- (10 3/4 ounce)
1 can tomato paste -- (6 ounce)
1 can tomato sauce -- (15 ounce)
1 small can mushroom
1 box elbow macaroni (cooked)
1 pkg. mozzarella cheese (shredded)
Preheat oven to 350 degrees. Brown ground beef and onion in dutch oven
over medium heat. Cook
macaroni as directed on pkg. Combine all ingredients reserving 1/2 pk. of
cheese. Mix well. Sprinkle
remaining cheese on top and bake for 30-45 minutes or until done.
Lasagna

Amount Measure Ingredient -- Preparation Method
1 1/2 lbs. s ground beef
3/4 lb. sausage (mild)
1 small can mushroom (drained)
1 cup onion (chopped)
2 cloves garlic (chopped)
1 pkg. mozzarella cheese (shredded)
2 tsp. s oregano
2 cans tomato soup -- (10 3/4 ounce)
1/2 cup water
2 tsp. s white vinegar
1 box lasagna noodle (cooked)
Preheat oven to 350 degrees. Cook noodles according to pkg. directions.
Brown hamburger, sausage,
garlic and onion over medium heat. Add remaining ingredients except cheese.
In 9 X 13 pan, layer
sauce, noodles, cheese (2-3 layers usually) ending with cheese. Bake for
30-45 minutes or until done.
Lemonade Salad

Amount Measure Ingredient -- Preparation Method
2 packages ritz crackers -- crushed finely
1/2 cup powdered sugar
1/2 cup butter -- melted
1 6 ounce container frozen lemonade
1 can condensed milk, sweetened -- (Eagle Brand)
1 8 ounce container Cool Whip
Mix together first three ingredients. Press into a 9X13 pan reserving 1
cup for topping. Mix together last
3 ingredients and pour into crust. Sprinkle with reserved crumbs.
Refrigerate.
VERY GOOD!!!!
Lime Jello Salad

Amount Measure Ingredient -- Preparation Method
1 box lime jello
1 can pears -- (8 1/4 oz.)
1 container cool whip -- (12 ounce)
1 package cream cheese -- (8 ounce)
Drain pears and add enough water to equal 1 cup of liquid. Microwave for
about 1 minute on high. Add
to jello. In a separate bowl, combine cream cheese and pears using mixer.
Add to jello mixture. Fold in
cool whip. Place in refrigerator to set.
Meat Casserole

8 pounds beef or venison -- cubed
4 large onion -- chopped
4 stalks celery -- chopped
24 carrots -- chopped
5 pounds potatoes -- cubed
6 teaspoons salt
1 tablespoon garlic powder
1/4 cup sugar
1/2 cup tapioca
2 cups tomato juice
1 packet stew seasoning
Preheat oven to 250 degrees. Mix above ingredients. Cover tightly with
foil. Bake for 5 hours.
*Stir from bottom midway through cooking*
