Microwave Baked Beans

Amount Measure Ingredient -- Preparation Method
1/2 lb. ground beef
1/2 lb. bacon
1 medium onion (chopped)
1 can kidney beans (drained) -- (15 ounce)
1 can butter beans (drained) -- (15 ounce)
1 can pork and beans -- (20 ounce)
1/2 cup brown sugar
1/4 cup molasses
1 small can tomato paste
1 tsp. white vinegar
In skillet over medium heat, brown together hamburger, bacon, and onion.
(DO NOT DRAIN). Add
remaining ingredients. Mix well. Place into microwave safe dish. Microwave
on high for 3 - 5 minutes.
Remove from microwave and stir well. Cover and continue to microwave on
high for an additional 15 -
20 minutes.
Microwave Fudge

Amount Measure Ingredient -- Preparation Method
2 pkgs.s bakers chocolate (8 oz. each)
1 can sweetened condensed milk -- (14 ounce)
2 teaspoons vanilla extract
Combine chocolate & milk and microwave on high for 2-3 minutes (stirring
occasionally) until melted.
Add vanilla. Pour into butter pan and refrigerate until set.
Mississippi Mud Cake

Amount Measure Ingredient -- Preparation Method
2 sticks margarine -- (or butter)
4 tablespoons cocoa
1 1/2 cups flour
1 cup nuts -- (chopped)
2 teaspoons vanilla
2 cups sugar
4 egg
1 7 oz jar marshmallow cream -- (softened)
Preheat oven to 350 degrees. In saucepan over medium heat combine cocoa and
margarine. Heat until
melted, stirring often to avoid burning. In a bowl, combine eggs, sugar,
cocoa/butter mixture and a dash
of salt. Then add flour, salt, vanilla, and nuts. Mix all ingredients well.
Pour into a greased 9 X 13 cake
pan. Bake for 30 - 35 minutes or until done.
Place jar of marshmallow cream into a pan of hot water to soften. Spread over
warm cake.
Combine remaining 5 ingredients (margarine, evap. milk, powdered sugar,
cocoa, vanilla). Mix well.
Spread over marshmallow. Using a knife, swirl chocolate frosting with
marshmallow cream.
No Bake Pumpkin Pie

Amount Measure Ingredient -- Preparation Method
2 pkgs.s non-instant vanilla pudding (cook
and serve)
1 1/3 cups milk (or half & half)
1 can pumpkins -- (16 ounce)
1 tsp. cinnamon (ground)
1/2 tsp. ginger (ground)
1 package cream cheese -- (4 ounce)
1 tbsp. milk (or half & half)
1 tbsp. sugar
1 1/2 cups cool whip (thawed)
1 6 oz. graham cracker pie crust (prepared)
Combine pudding mix & 1 1/3 cup of milk in large sauce pan. Cook over medium
heat until full boil and
mixture is thick. Stir in pumpkin and spices using a whisk. Cook on medium heat
until mixture comes to
a boil. Remove from heat and let stand 20 minutes or until cool, stirring
occasionally.
Mix cream cheese, 1 tbsp. of milk and sugar in large bowl with whisk until
smooth. Gently stir in
whipped topping. Spread over crust. Pour pudding mixture over cream cheese
mixture. Refrigerate at
least 4 hours or overnight. Garnish with additional whipped cream and nuts if
desired.
Old Fashioned Apple Crisp

Amount Measure Ingredient -- Preparation Method
4 cups apple (3-4 medium -- sliced,peeled)
3/4 cup brown sugar
1/2 cup flour
1 tsp. cinnamon
1/4 tsp. allspice
1/3 cup butter
Preheat oven to 350 degrees. Peel, core, and slice apples and layer into 8"
baking dish. In a bowl,
combine brown sugar, flour, cinnamon, and allspice. Cut in butter. Mixture
will be crumbly. Pour over
apples. Bake for 30 - 35 minutes or until apples are tender.
Orange Fluff

Salad/Fruit salad
Amount Measure Ingredient -- Preparation Method
1 small pkg. orange jello
1 small pkg. non-instant vanilla pudding
1 small pkg. tapioca pudding
1 carton dream whip
1 small can mandarin orange segment (drained)
Place jello and pudding mixes in 2 quart saucepan. Add 3 cups boiling
water. Cook over medium heat
until very thick (full boil). Coo thoroughly. Stir in Dream Whip and small
can mandarin oranges
(drained).
Refrigerate until set.
Oven Beef Stew

Amount Measure Ingredient -- Preparation Method
1 28 ounce can tomatoes
3 tablespoons Tapioca -- Instant
2 tablespoons sugar
2 cups carrot -- chopped
2 cups potatoes -- diced
1 cup celery -- chopped
1 medium onion -- chopped fine
1 1/2 pounds beef stew meat
Spray roasting pan with non-stick cooking spray. Combine all ingredients
in a large bowl and mix well.
Put into the prepared pan and bake for 3 hours @ 325 degrees or 4 hours @
250 degrees.
Peach Cake

Amount Measure Ingredient -- Preparation Method
2 eggs -- beaten
2 cups sugar
1 teaspoon baking soda
2 cups flour
1 large can peaches -- partial drained/chopped
1 stick margarine -- melted - add to batter last
Preheat oven to 350 degrees. Mix all together being sure to add melted
oleo last. Bake in 9 X 13
greased pan for 40-50 minutes.
TOPPING - Combine last 4 ingredients (oleo,sugar,milk/cream,vanilla). Cook
until it coats the spoon.
Pour over your cake while cake is still warm------not hot.
Peach-A-Berry Cobbler

Amount Measure Ingredient -- Preparation Method
1 cup flour, all-purpose
1/2 cup sugar, granulated
1 1/2 teaspoons baking powder
1/2 cup milk
1/4 cup butter
1/4 cup sugar, brown
1 tablespoon cornstarch
1/2 cup cold water
3 cups sliced peaches
1 cup fresh blueberries
1 tablespoon butter
1 tablespoon lemon juice
2 tablespoons granulated sugar
1/4 teaspoon ground nutmeg or cinnamon
Preheat oven to 350 degrees.
For topping, stir together flour, 1/2 cup granulated sugar, and baking powder.
Add milk and 1/4 cup
butter all at once. Set aside.
For filling, in a medium saucepan, stir together brown sugar and cornstarch;
stir in water. Add peaches
and blueberries. Cook and stir over medium heat until thickened and bubbly.
Add one tablespoon
butter and lemon juice; stir till butter melts. Pour into a 1/2 quart
ungreased casserole. Spoon topping in
mounds over hot filling; Spread evenly over filling. Sprinkle with a mixture
of 2 tablespoons sugar and
nutmeg (or cinnamon). Place on a shallow baking pan in oven.
Bake cobbler for about 35 minutes or till bubbly and a toothpick inserted into
crust comes out clean.
Serve warm with ice cream, if desired.
Peanut Butter Cups

Amount Measure Ingredient -- Preparation Method
2 sticks butter -- melted
1 3/4 cups graham cracker crumbs
2 1/3 cups powdered sugar
1 cup peanut butter
1 12 ounce bag semisweet chocolate chip
In a large sauce pan over medium heat melt butter. Add powdered sugar.
Next add peanut butter and
stir until melted. Last add graham cracker crumbs, mixing until moist.
Press into a 9 X 13 cake pan. In a
small sauce pan over medium heat melt chocolate chips stirring often to
avoid burning. Pour melted
chips over peanut butter mixture and put into refrigerator for 1 hour.
Allow to stand at room temp. for
about 10 minutes before cutting so the chocolate topping doesn't crack
when you cut it.
