Amount Measure Ingredient -- Preparation Method
1/2 pound lard
3 1/2 cups flour -- (3-4 cups)
pinch salt
cold water
flour -- used to roll dough out onto
Combine lard, flour, and salt. Mix well. Add cold water to right consistency.
Roll out on floured sheet.
Makes 5-7 9inch crusts.
Pineapple Pie

1 can crushed pineapple
1 can condensed milk, sweetened
1 16 ounce container cool whip
1 cup pecans -- chopped
2 9 inch graham cracker crumb pie crust
5 tablespoons lemon juice -- (3-6 tbsp)
Mix all ingredients together adding lemon juice last. Keep adding lemon
juice a little at a time until
mixture is of desired consistency. Pour into pie shells and chill until
firm.
A delicious dessert that looks mouth-watering.
Pizza Cups

3/4 pound ground beef
1 6 ounce can tomato paste
1 tablespoon dried onion
1 teaspoon Italian Seasoning
1 10 ounce container biscuit dough
3/4 cup Mozzarella cheese -- Shredded
Preheat oven to 400 degrees. Brown and drain ground beef. Stir in tomato
paste, onion and seasoning
(it will be thick). Cook over low heat for 5 minutes. Place biscuits into a
greased muffin tin, pressing to
cover bottom and sides. Spoon 1/4 cup of meat into each biscuit and sprinkle
with cheese. Bake for 12
minutes or until golden brown.
Poor Man's Pie

Amount Measure Ingredient -- Preparation Method
1 can mushroom soup
1 can french green beans
1 lb. ground beef -- cooked and drained
6 servings instant potatoes -- cooked
1 pkg. cheddar cheese, shredded
1 can Frenches Fried Onions -- (or whatever brand)
Preheat oven to 450 degrees. Drain French style green beans and mix with
soup. Reserve about 1/3 of
the mixture. Brown and drain hamburger. Layer hamburger and about 1/3 of the
green bean/soup
mixture. Top with potatoes and cheese. Bake at 450 degrees for about 20
minutes. Remove from oven.
Combine dried onions with remaining green bean/soup mixture and spread over
top of pie.
Return to oven and continue to bake for an additional 2 - 3 minutes or until
brown.
Pork Chop Casserole

2 cans Cream of Mushroom soup
1 onion -- sliced
potatoes -- sliced
pork chops
Preheat oven to 350 degrees.
Peel and slice potatoes. (as for fried potatoes) Brown pork chops in skillet.
Place sliced potatoes into
the dutch oven. Slice onion over the top of potatoes. Add 2 cans of cream of
mushroom soup. (stir in)
Place pork chops on top of potatoes.
Cover and bake for 1 hour or until chops and potatoes are tender.
Pork Sausage Casserole

3 cans green beans -- drained
3 cans sliced potatoes -- drained
pork links or patties
Brown sausage in a dutch oven. After sausages are browned, if you use
patties, break into pieces. DO
NOT drain grease off of sausage. Add all the vegetables to sausage, stir
well. Cover and simmer for 30
minutes stirring often.
Potato Pancakes

7 potatoes -- (6-8) grated
4 eggs
3/4 loaf bread
water
salt
pepper
In a large bowl combine bread and water. Using your hands mix well, then
squeeze out excess water.
Add eggs and salt & pepper to taste. Mix well.
Melt Crisco on griddle. When hot reduce heat to medium. Put about a handful
of mixture onto griddle.
Brown on both sides. According to some family members this dish is good
anytime hot or cold.

Potato Soup

Amount Measure Ingredient -- Preparation Method
6 potatoes -- diced
2 sticks margarine
1 large onion -- minced
2 1/2 tablespoons flour -- (2-3 tbspns)
2 cups milk
vinegar
In a saucepan boil potatoes. Drain and save water. In a dutch oven sized
pan place margarine and
onion. Cook over medium heat until margarine is melted and onions are
tender. (be careful margarine
does not burn). Next add 2 to 3 tablespoons of flour to make a paste. Add
water from potatoes and
about 2 cups of milk. Finally add potatoes and a little vinegar. Cook
slowly.
If too thick add more milk.
Pumpkin Dessert

Amount Measure Ingredient -- Preparation Method
1 29 ounce can pumpkin
1 12 ounce can evaporated milk
4 eggs
1 1/2 cups granulated sugar
1 teaspoon ginger
1 teaspoon nutmeg
2 teaspoons cinnamon
1 package yellow cake mix -- dry
1 cup margarine -- melted
1 1/2 cups pecans -- chopped
Preheat oven to 350 degrees. Mix pumpkin, milk, eggs, sugar, ginger,
nutmeg, & cinnamon together.
Put into a 9X13 pan. Sprinkle dry cake mix over top and sprinkle with
nuts. Bake for 1 hour.
Punch Bowl Cake

Amount Measure Ingredient -- Preparation Method
1 box yellow cake mix
2 boxes instant vanilla pudding and pie filling
4 sliced banana -- (4-5 sliced)
1 20 ounce can crushed pineapple -- (do not drain)
2 8 ounce cartons cool whip -- thawed
chopped nuts
Cook cake as directed on box in 2 layers. Let cool and assemble as follows:
Place 1st layer of cake in
bottom of punch bowl. Prepare pudding (one box at a time) and cover bottom
layer with one box of
pudding. Then slice enough bananas to cover pudding. Next spoon half of
pineapple on bananas. Cover
the pineapple with one of the cartons of cool whip. Now place second layer of
cake on top of cool
whip and repeat consecutive layers ending with cool whip. Top with nuts,
refrigerate.
Puppy Chow

Amount Measure Ingredient -- Preparation Method
1 12 ounce box Crispix Cereal
1 12 ounce bag chocolate chips
1 stick butter
1 12 ounce jar peanut butter
1 1 pound box powdered sugar
Melt together peanut butter, chocolate chips, and butter. (Approx. 3
minutes in microwave). Add cereal
and stir, make sure cereal is covered w/mixture. Pour powdered sugar
and cereal mixture into plastic
bag, shake and serve. (Great for school bake sales and after school treats.)
